- In a glass or metal mixing bowl, combine egg whites and sugar. Place the bowl over the pot, creating a double boiler, and whisk constantly until the sugar dissolves and reaches 160°F, about 5 minutes.
- Transfer the egg white mixture to a stand mixer with a whisk attachment. Beat on medium speed until stiff peaks form, approximately 5 minutes.
- Gradually add marshmallow fluff, 1-2 teaspoons at a time, over 1-2 minutes. Add the vanilla extract and continue to beat on high until stiff peaks form, about 3 minutes.
