  • 1 2/3 cups sugar
  • 1/4 cup cornstarch
  • 1 tbsp pure vanilla extract
  • 2 large eggs
  • 3/4 cup heavy whipping cream
  • 1 jar Smucker’s strawberry ice cream topping

For the Topping:

  • 12 Golden Oreos, crushed and divided into 2 bowls
  • 1 1/2 tsp softened butter
  • 3 tbsp strawberry gelatin powder

Instructions

Prepare the Crust:

  1. Preheat the oven to 350°F.
  2. Line the outer perimeter of a springform pan with aluminum foil and generously butter the inside.
  3. Crush the Golden Oreos and mix with the melted butter. Press the mixture firmly into the bottom of the pan.

Make the Filling:

  1. In a large bowl, beat 1 package of cream cheese with 1/3 cup sugar and cornstarch until creamy (about 3 minutes).
  2. Gradually add the remaining cream cheese, beating well after each addition.
  3. Increase the mixer speed to high and beat in the remaining 1 1/3 cups sugar and vanilla extract.
  4. Blend in the eggs, one at a time, beating well after each addition.
  5. Mix in the heavy whipping cream, blending until completely combined, but do not overmix.

Assemble and Bake:

  1. Spoon half of the cheesecake filling over the prepared crust.
  2. Add half of the strawberry topping in dollops and use a knife to swirl it into the filling.
  3. Spoon the remaining cheesecake filling on top and repeat the strawberry swirling process.
  4. Bake for 1 hour or until the cheesecake has a slight jiggle when gently shaken.

Prepare the Crumb Topping:

  1. In a small bowl or food processor, pulse the Golden Oreos into large crumbs.
  2. Mix in the softened butter to form pea-sized clumps. Set aside 2 tablespoons of the mixture.
  3. Add the strawberry gelatin powder to the remaining crumbs and mix, pinching pieces together to form a crumbly topping.

Finish the Cake:

  1. Once the cheesecake has cooled, sprinkle the crumb topping over the top. Add the reserved plain Oreo crumbs to finish.

Serve:

  1. Refrigerate for a few hours or overnight. Slice and serve for a festive dessert that will wow your holiday guests!
