Ingredients

For Marinating the Shrimp:

  • 14 oz (400 grams) shrimp, peeled and deveined

  • 1 tsp paprika
  • 1/3 tsp black pepper
  • 2 tsp vegetable oil

For the Sauce:

  • 1/2 cup water
  • 1/2 tsp sugar
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1/2 tbsp hoisin sauce
  • 2 tsp cornstarch
  • 1 tsp dark soy sauce

For Stir-Frying:

  • 2-3 tbsp vegetable oil
  • 12 oz (340 grams) broccoli florets
  • 8 cloves garlic, diced
  • 1/2 tbsp minced ginger
  • A few dried red chilies (optional)
  • 2 tbsp water

Instructions

  1. Marinate the Shrimp:

  • Pat the shrimp dry with paper towels. In a bowl, mix shrimp with salt, paprika, black pepper, and vegetable oil. Set aside to marinate.

  1. Prepare the Sauce:

  • In a bowl, whisk together water, sugar, oyster sauce, soy sauce, hoisin sauce, cornstarch, and dark soy sauce until well combined. Set aside.

  1. Prepare the Broccoli and Aromatics:

  • Cut broccoli into florets. Dice garlic and mince ginger. If desired, cut open dried red chilies for extra heat.

  1. Heat the Wok:

  • Heat a carbon steel wok on high until smoking hot. Add vegetable oil and swirl to coat the bottom.

  1. Stir-Fry the Shrimp:

  • Add the marinated shrimp to the hot wok. Stir-fry for 2-3 minutes until they turn pink but are not fully cooked. Remove shrimp from the wok.

  1. Stir-Fry the Vegetables:

  • Reduce heat to medium. Add garlic, ginger, dried chilies, and broccoli to the wok. Stir-fry for 1-2 minutes until fragrant.

  1. Steam the Broccoli:

  • Add 2 tablespoons of water to the side of the wok and cover with a lid. Let steam for about 2 minutes to cook the broccoli to a tender-crisp texture.

  1. Combine and Finish:

  • Pour the sauce into the wok and return the shrimp. Toss everything together, cooking for 2-3 minutes until the sauce thickens and coats the shrimp and broccoli.

  1. Serve:

  • Serve the stir fry hot, garnished with additional red chili flakes or fresh herbs if desired.
