    Ingredients

    For the Chicken:

    • 2 chicken breasts, cut into bite-sized cubes
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • 1 teaspoon paprika
    • 1 teaspoon Italian seasoning
    • 1 tablespoon olive oil

    For the Sauce & Orzo:

    • 2 tablespoons butter
    • 4 cloves garlic, minced
    • ½ cup sun-dried tomatoes, chopped
    • 1 teaspoon red pepper flakes (optional)
    • 1 ½ cups chicken broth
    • 1 cup heavy cream (or half & half)
    • 1 ½ cups orzo pasta
    • ½ cup Parmesan cheese, grated
    • 2 cups baby spinach, chopped
    • 1 teaspoon lemon juice (for freshness)


    Instructions

    1. Cook the Chicken

    • Heat olive oil in a large skillet or deep pan over medium-high heat.
    • Season chicken with salt, pepper, paprika, and Italian seasoning.
    • Sear the chicken until golden brown, about 4-5 minutes per side. Remove from pan and set aside.

    2. Sauté the Aromatics

    • In the same pan, melt butter and add garlic. Cook for 30 seconds until fragrant.
    • Stir in sun-dried tomatoes and red pepper flakes.

    3. Cook the Orzo

    • Pour in chicken broth and heavy cream. Stir well.
    • Add orzo pasta and bring to a simmer. Cover and cook for 10-12 minutes, stirring occasionally.

    4. Add Cheese & Spinach

    • Once orzo is tender, stir in Parmesan cheese, spinach, and lemon juice.
    • Return the cooked chicken to the pan and stir everything together.

    5. Serve & Enjoy!

    • Garnish with extra Parmesan and fresh herbs, then serve warm!
