Ingredients
For the Chicken:
- 2 chicken breasts, cut into bite-sized cubes
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
For the Sauce & Orzo:
- 2 tablespoons butter
- 4 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 teaspoon red pepper flakes (optional)
- 1 ½ cups chicken broth
- 1 cup heavy cream (or half & half)
- 1 ½ cups orzo pasta
- ½ cup Parmesan cheese, grated
- 2 cups baby spinach, chopped
- 1 teaspoon lemon juice (for freshness)
Instructions
1. Cook the Chicken
- Heat olive oil in a large skillet or deep pan over medium-high heat.
- Season chicken with salt, pepper, paprika, and Italian seasoning.
- Sear the chicken until golden brown, about 4-5 minutes per side. Remove from pan and set aside.
2. Sauté the Aromatics
- In the same pan, melt butter and add garlic. Cook for 30 seconds until fragrant.
- Stir in sun-dried tomatoes and red pepper flakes.
3. Cook the Orzo
- Pour in chicken broth and heavy cream. Stir well.
- Add orzo pasta and bring to a simmer. Cover and cook for 10-12 minutes, stirring occasionally.
4. Add Cheese & Spinach
- Once orzo is tender, stir in Parmesan cheese, spinach, and lemon juice.
- Return the cooked chicken to the pan and stir everything together.
5. Serve & Enjoy!
- Garnish with extra Parmesan and fresh herbs, then serve warm!
