Ingredients
Pancakes

1½ cups all-purpose flour

2 tbsp sugar

1 tbsp poppy seeds

1 tbsp baking powder

½ tsp baking soda

¼ tsp salt

1 cup buttermilk

1 egg

3 tbsp melted butter

Zest of 2 lemons

2 tbsp lemon juice

1 tsp vanilla extract
Glaze (optional)

1 cup powdered sugar
-
2 tbsp lemon juice
-
½ tsp lemon zest
-
1–2 tsp milk (as needed)
Instructions

Mix dry ingredients in a bowl.

Whisk wet ingredients separately. Combine both just until mixed. Rest 5 mins.

Heat greased skillet. Scoop ¼ cup batter per pancake. Flip when bubbles form.

Mix glaze ingredients and drizzle over warm pancakes. Serve with fruit, curd, or yogurt.
