Ingredients:
- 1 1/2 lbs chicken breast, thinly sliced
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, thinly sliced

- 1 cup cooked rice
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels (fresh, canned, or thawed if frozen)
- 1 cup salsa
- 1 1/2 cups shredded cheddar cheese
- Fresh cilantro, for garnish
- Sour cream, for serving
Directions:
- Preheat oven to 375°F (190°C).
- Cook Chicken and Vegetables: In a large skillet, heat olive oil over medium-high heat. Add chicken, bell peppers, and onion, seasoning with chili powder, cumin, garlic powder, paprika, salt, and pepper. Cook until the chicken is browned and vegetables are tender.
