Instructions
In a skillet, heat olive oil over medium. Add onion and cook until soft (5-7 minutes). Stir in garlic and herbs; cook 1 minute.
Add white beans and broth. Season with salt and pepper. Simmer gently 5 minutes to blend flavors.
Pour bean mixture into a greased baking dish. Sprinkle breadcrumbs or cheese evenly on top.
Bake at 375°F (190°C) for 20-25 minutes, until bubbly and golden.
Garnish with parsley. Serve with crusty bread, salad, or as a hearty side dish.
