Strawberry Earthquake Cake

Ingredients

Cake:

  • 1 box vanilla or white cake mix
  • Ingredients listed on box (usually eggs, oil, water)

Strawberry Swirl:

  • 1 ½ cups strawberries (fresh or frozen)
  • ¼ cup sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

Cream Cheese Layer:

  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 egg
  • 1 tsp vanilla extract

Optional:

  • Extra strawberries, whipped cream, powdered sugar

Instructions

  1. Make strawberry sauce: simmer strawberries, sugar, lemon juice, and cornstarch until thick. Cool.
  2. Prepare cake mix as directed. Pour into greased 9×13 pan.
  3. Beat cream cheese, powdered sugar, egg, and vanilla.
  4. Drop spoonfuls of cream cheese and strawberry sauce over batter. Swirl gently.
  5. Bake at 350°F for 40–45 min until golden and set.
  6. Cool 30 mins. Garnish and serve.

Storage: Refrigerate up to 4 days. Can freeze slices individually.

Notes: Try chocolate cake mix, mix berries, or coconut topping for variations!
