Ingredients
For the Cookies:
- ½ cup (115g) unsalted butter, softened
 - ½ cup (100g) brown sugar
 - ¼ cup (50g) granulated sugar
 - 1 large egg
 - ½ teaspoon vanilla extract
 - ¼ teaspoon almond extract (optional, enhances pistachio flavor)
 - ¼ cup (60g) pistachio paste or finely ground pistachios
 - 1 ½ cups (190g) all-purpose flour
 - ½ teaspoon baking soda
 - ½ teaspoon salt
 - ½ cup dark chocolate chunks or chips
 - ¼ cup chopped pistachios
 
For the Pistachio Glaze:
- ½ cup (100g) white chocolate, melted
 - 2 tablespoons pistachio cream or pistachio paste
 - 1 tablespoon heavy cream (or milk, for consistency)
 
For Garnish:
- Extra chopped pistachios
 - Flaky sea salt
 - Crushed freeze-dried raspberries (optional, for a pop of color)
 
Instructions
1. Prepare the Dough
- In a bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
 - Add the egg, vanilla extract, and almond extract. Mix well.
 - Stir in the pistachio paste until fully combined.
 
2. Combine Dry Ingredients
- In a separate bowl, whisk together flour, baking soda, and salt.
 - Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
 
3. Fold in the Chocolate & Pistachios
- Gently fold in the dark chocolate chunks and chopped pistachios.
 
4. Chill the Dough
- Cover and chill the dough for at least 30 minutes (or overnight for even better flavor!).
 
5. Bake the Cookies
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
 - Scoop dough into 1 ½-inch balls and place them 2 inches apart.
 - Bake for 10-12 minutes, or until the edges are lightly golden but the centers are soft.
 - Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
 
6. Make the Pistachio Glaze
- Melt white chocolate in the microwave or over a double boiler.
 - Stir in pistachio cream and heavy cream until smooth.
 
7. Decorate the Cookies
- Drizzle or spread the pistachio glaze over the cooled cookies.
 - Sprinkle with extra chopped pistachios, flaky sea salt, and freeze-dried raspberries for a bakery-style look.
