Ingredients

For the Cookies:

  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional, enhances pistachio flavor)
  • ¼ cup (60g) pistachio paste or finely ground pistachios
  • 1 ½ cups (190g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup dark chocolate chunks or chips
  • ¼ cup chopped pistachios

For the Pistachio Glaze:

  • ½ cup (100g) white chocolate, melted
  • 2 tablespoons pistachio cream or pistachio paste
  • 1 tablespoon heavy cream (or milk, for consistency)

For Garnish:

  • Extra chopped pistachios
  • Flaky sea salt
  • Crushed freeze-dried raspberries (optional, for a pop of color)


Instructions

1. Prepare the Dough

  • In a bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg, vanilla extract, and almond extract. Mix well.
  • Stir in the pistachio paste until fully combined.

2. Combine Dry Ingredients

  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

3. Fold in the Chocolate & Pistachios

  • Gently fold in the dark chocolate chunks and chopped pistachios.

4. Chill the Dough

  • Cover and chill the dough for at least 30 minutes (or overnight for even better flavor!).

5. Bake the Cookies

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop dough into 1 ½-inch balls and place them 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden but the centers are soft.
  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

6. Make the Pistachio Glaze
