3–4 lb beef brisket, trimmed
1 tbsp olive oil
1 large onion, sliced 🧅
4 cloves garlic, minced 🧄
1 cup beef broth
1/2 cup BBQ sauce (your favorite!)
2 tbsp Worcestershire sauce
1 tbsp soy sauce
2 tbsp brown sugar
1 tsp smoked paprika
1 tsp salt 🧂
1/2 tsp black pepper
Optional: a splash of balsamic vinegar or red wine for extra depth 🍷
Instructions
Sear the brisket (optional but adds flavor): Heat olive oil in a skillet over medium-high heat. Sear brisket on both sides until nicely browned (2–3 minutes per side).
Place sliced onions and garlic in the bottom of the slow cooker.
In a bowl, whisk together beef broth, BBQ sauce, Worcestershire, soy sauce, brown sugar, smoked paprika, salt, and pepper. Pour over the brisket.
Place brisket on top of the onions, fat side up.
Cover and cook on low for 8–10 hours or high for 5–6 hours, until fork-tender.
Transfer brisket to a cutting board and let it rest for 10–15 minutes. Slice against the grain.
Optional: Simmer remaining sauce in a saucepan for 10–15 minutes to thicken before pouring over the sliced meat.
