Ingredients

1 lb skirt steak

1 tbsp olive oil

1 tsp smoked paprika

1/2 tsp cumin

2 cloves garlic, minced

2 cups cooked rice

1 red & 1 orange bell pepper, sliced

2 cups kale or spinach

Salt & pepper
For the Chimichurri:

1 cup parsley
-
2 tbsp cilantro
-
4 cloves garlic
-
1/3 cup olive oil
-
2 tbsp red wine vinegar

1 tsp oregano
-
1/2 tsp red pepper flakes
Instructions

Combine all chimichurri ingredients and set aside.

Season steak and sear for 3–4 minutes per side. Let rest, then slice.

Sauté peppers and greens with garlic powder.

Assemble bowls with rice, veggies, and steak.

Drizzle chimichurri over top and serve immediately. 🌿🥩🍚
