Ingredients

- 1 avocado, cubed
- 1 cup grape or cherry tomatoes, halved
- Juice of half a lemon (1–2 tablespoons)
- Salt to season
Instructions
Prepare the Garlic Bread:
- Preheat your oven to a medium-high grill/broil setting.
- Arrange the bread slices on a baking tray lightly greased with cooking spray or oil. Spread garlic butter on each slice.
- Grill/broil until golden and crispy, then remove and set aside.
Prepare the Garlic Shrimp:
- In a bowl, mix minced garlic, sweet paprika, lemon juice, and shrimp. Season with salt.
- Heat a teaspoon of oil in a large frying pan or skillet over medium-high heat. Cook the shrimp for about 3 minutes on each side until they turn opaque.
- Remove from heat, stir in fresh parsley, and set aside to cool slightly.
Make the Avocado Salad:
- In a bowl, combine cubed avocado, halved tomatoes, lemon juice, and salt. Gently fold in the cooked shrimp.
Assemble the Dish:
- Spoon the shrimp and avocado mixture onto the toasted garlic bread slices.
- Serve warm or slightly cooled.
