Philly Cheesesteak Meatloaf

    Ingredients

    • 1 ½ lbs ground beef
    • 1 small bell pepper, diced
    • 1 small onion, diced
    • 2 cloves garlic, minced
    • 1 tbsp olive oil
    • ½ tsp salt
    • ½ tsp black pepper
    • 1 tbsp Worcestershire sauce
    • ½ tsp Italian seasoning
    • 1 cup shredded provolone/mozzarella
    • ½ cup breadcrumbs
    • 2 eggs
    • ⅓ cup milk

    Topping:

    • ⅓ cup ketchup
    • ½ tbsp brown sugar
    • ½ tsp Dijon mustard
    • ½ cup shredded cheese (for topping)

    Instructions

    1. Sauté bell pepper, onion, and garlic in olive oil until soft. Cool.
    2. Mix ground beef, veggies, Worcestershire, spices, eggs, milk, breadcrumbs.
    3. Fold in shredded cheese. Shape into loaf.
    4. Bake at 375°F for 30 min.
    5. Add glaze & top with cheese. Bake 15–20 more min or until internal temp is 160°F.
    6. Rest 10 minutes. Slice and serve.

    Storage: Fridge: Up to 4 days
    Freezer: Up to 3 months (unbaked)
    Reheat: 325°F oven or microwave
