These crispy okra patties are easy to make, packed with flavor, and perfect for dipping!

Ingredients

Ingredients (Serves 4-6)

  • 1 pound okra, chopped
  • ½ cup onion, chopped
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup cornmeal (for extra crispiness)
  • ½ cup all-purpose flour
  • 1 egg, beaten
  • ½ cup milk or buttermilk
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon paprika (optional, for added flavor)
  • Oil for frying

Optional Add-ins:

  • ½ cup shredded cheddar cheese (for cheesy okra patties)
  • 1 jalapeño, finely diced (for a spicy kick)
  • ½ teaspoon cayenne pepper (if you like it extra spicy!)

Instructions

Step-by-Step Instructions

1. Prepare the Batter

  • In a large mixing bowl, combine chopped okra, onion, cornmeal, flour, salt, pepper, and optional spices.
  • In a separate small bowl, whisk together the egg and milk.
  • Pour the wet ingredients into the dry ingredients and mix until combined. The batter should be thick but spoonable.

2. Heat the Oil

  • Heat about ½ inch of oil in a large skillet over medium heat until it reaches 350°F (175°C).
  • Drop a small amount of batter into the oil—if it sizzles immediately, it’s ready.

3. Fry the Okra Patties

  • Using a spoon or scoop, drop tablespoon-sized portions of batter into the hot oil.
  • Flatten slightly with the back of the spoon to form patties.
  • Fry for 2-3 minutes per side, or until golden brown and crispy.
  • Remove and place on a paper towel-lined plate to drain excess oil.

4. Serve & Enjoy

  • Serve warm with your favorite dipping sauce.
  • Garnish with chopped green onions or parsley for extra flavor.

Notes

Tips for the Best Okra Patties

✅ Use fresh okra – The fresher, the better for great texture and flavor.
✅ Don’t overcrowd the pan – Cook in small batches for even frying.
✅ Adjust the spice level – Add cayenne pepper or jalapeños for extra heat.
✅ Want extra crispiness? – Use more cornmeal and less flour.
✅ Make them gluten-free – Use gluten-free flour instead of all-purpose.
