Mini Meatloaf Muffins with Mashed Potato Frosting

    Ingredients

    Meatloaf Ingredients:

    • 1 lb ground beef
    • ½ cup breadcrumbs
    • ¼ cup milk
    • 1 egg
    • 1 small onion, finely diced
    • 1 tsp garlic powder
    • 1 tsp dried parsley
    • ½ tsp salt
    • ½ tsp pepper
    • ¼ cup ketchup (plus more for topping)

    Mashed Potato Frosting:

    • 34 russet potatoes, peeled and chopped
    • 3 tbsp butter
    • ¼ cup sour cream
    • ¼ cup milk (more if needed)
    • Salt & pepper, to taste
    • Optional: chopped chives for garnish

    Instructions

    1. Preheat oven to 375°F. Grease muffin tin.
    2. Mix all meatloaf ingredients in a bowl. Divide into 12 muffin cups. Top with ketchup if desired.
    3. Bake 20–25 minutes or until cooked through (160°F).
    4. Meanwhile, boil and mash potatoes with butter, sour cream, and milk. Season to taste.
    5. Pipe mashed potatoes onto cooled muffins. Garnish with chives.

    Storage: Fridge: 4 days
    Freezer: 3 months (wrap individually)

    Reheat: 350°F oven for 15 mins or microwave 1–2 mins.
