Ingredients
Meatloaf Ingredients:
- 1 lb ground beef
- ½ cup breadcrumbs
- ¼ cup milk
- 1 egg
- 1 small onion, finely diced
- 1 tsp garlic powder
- 1 tsp dried parsley
- ½ tsp salt
- ½ tsp pepper
- ¼ cup ketchup (plus more for topping)
Mashed Potato Frosting:
- 3–4 russet potatoes, peeled and chopped
- 3 tbsp butter
- ¼ cup sour cream
- ¼ cup milk (more if needed)
- Salt & pepper, to taste
- Optional: chopped chives for garnish
Instructions
- Preheat oven to 375°F. Grease muffin tin.
- Mix all meatloaf ingredients in a bowl. Divide into 12 muffin cups. Top with ketchup if desired.
- Bake 20–25 minutes or until cooked through (160°F).
- Meanwhile, boil and mash potatoes with butter, sour cream, and milk. Season to taste.
- Pipe mashed potatoes onto cooled muffins. Garnish with chives.
Storage: Fridge: 4 days
Freezer: 3 months (wrap individually)
Reheat: 350°F oven for 15 mins or microwave 1–2 mins.
