  • ½ cup white sugar
  • 2 large egg whites
  • ¼ cup marshmallow fluff (recommended: Jet-Puffed Marshmallow Creme)
  • 1 teaspoon vanilla extract

Instructions

  1. Add water to a small pot and bring it to a simmer over medium heat.
  2. In a glass or metal mixing bowl, combine egg whites and sugar. Place the bowl over the pot, creating a double boiler, and whisk constantly until the sugar dissolves and reaches 160°F, about 5 minutes.
  3. Transfer the egg white mixture to a stand mixer with a whisk attachment. Beat on medium speed until stiff peaks form, approximately 5 minutes.
  4. Gradually add marshmallow fluff, 1-2 teaspoons at a time, over 1-2 minutes. Add the vanilla extract and continue to beat on high until stiff peaks form, about 3 minutes.
  5. For Cupcakes: Spoon frosting into a piping bag with your choice of tip and pipe onto cupcakes.
  6. For Cakes: Spread frosting evenly over the sides and top of the cake with a spatula.
  7. Garnish with mini marshmallows or chocolate sprinkles for a festive touch.
