Low Carb Unstuffed Cabbage Casserole

Ingredients

  • 1 lb ground beef

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 small head cabbage, chopped

  • 1 (14 oz) can diced tomatoes

  • 1 (8 oz) can tomato sauce

  • ½ cup beef broth or water

  • 1 tsp paprika

  • ½ tsp dried oregano

  • Salt and pepper, to taste

Optional:

  • 1 tbsp tomato paste

  • 1 tsp Worcestershire sauce

  • 1 tsp smoked paprika

  • Crushed red pepper flakes

  • Shredded cheese for topping

Instructions

  1. In a large skillet or pot, brown ground beef with onion over medium heat.

  2. Add garlic, seasonings, and stir for 1 minute.

  3. Mix in tomatoes, tomato sauce, broth, and bring to simmer.

  4. Fold in cabbage. Cover and simmer 25–30 minutes until cabbage is soft.

  5. Optional: Add cheese or extra seasonings during last 5 minutes.

  6. Serve hot, with garnish if desired.
