Perfect as a side dish for dinner, meal prep, or a low-carb holiday favorite, this casserole is easy to make and full of indulgent flavor.

Ingredients

For the Cauliflower Bake

  • 2 small heads of cauliflower, cut into florets
  • 3 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika (optional)
  • 1 ½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

For Garnishing (Optional)

  • ¼ cup crumbled bacon
  • 2 tablespoons chopped fresh parsley
  • ½ teaspoon red pepper flakes (for a spicy kick!)

Instructions

Step 1: Preheat & Prepare

  • Preheat your oven to 375°F (190°C).
  • Grease a 9×13-inch baking dish with butter or non-stick spray.

Step 2: Cook the Cauliflower

  • Bring a large pot of salted water to a boil.
  • Add the cauliflower florets and cook for 5 minutes until slightly tender.
  • Drain well and pat dry to remove excess moisture.

(💡 Pro Tip: Drying the cauliflower ensures a creamier, less watery bake!)

Step 3: Make the Creamy Garlic Sauce

  • In a large skillet, melt the butter over medium heat.
  • Add the minced garlic and cook for 30 seconds until fragrant.
  • Stir in the flour and cook for 1 minute, whisking continuously.
  • Slowly pour in the heavy cream, whisking to remove lumps.
  • Add the salt, pepper, onion powder, and smoked paprika, and simmer for 2 minutes until thickened.

Step 4: Assemble the Casserole

  • Place the cooked cauliflower into the prepared baking dish.
  • Pour the garlic cream sauce evenly over the cauliflower.
  • Sprinkle cheddar, mozzarella, and Parmesan cheese on top.

Step 5: Bake Until Golden & Bubbly

  • Bake for 20-25 minutes, or until the cheese is golden brown and bubbly.
  • (Optional) Broil for the last 2 minutes for an extra crispy cheese topping!

Step 6: Garnish & Serve!

  • Remove from the oven and let cool for 5 minutes.
  • Sprinkle with crumbled bacon and fresh parsley for extra flavor.
  • Serve warm and enjoy the cheesy, creamy deliciousness!
