For Garnishing (Optional)
- ¼ cup crumbled bacon
- 2 tablespoons chopped fresh parsley
- ½ teaspoon red pepper flakes (for a spicy kick!)
Instructions
Step 1: Preheat & Prepare
- Preheat your oven to 375°F (190°C).
- Grease a 9×13-inch baking dish with butter or non-stick spray.
Step 2: Cook the Cauliflower
- Bring a large pot of salted water to a boil.
- Add the cauliflower florets and cook for 5 minutes until slightly tender.
- Drain well and pat dry to remove excess moisture.
(💡 Pro Tip: Drying the cauliflower ensures a creamier, less watery bake!)
Step 3: Make the Creamy Garlic Sauce
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Stir in the flour and cook for 1 minute, whisking continuously.
- Slowly pour in the heavy cream, whisking to remove lumps.
- Add the salt, pepper, onion powder, and smoked paprika, and simmer for 2 minutes until thickened.
Step 4: Assemble the Casserole
- Place the cooked cauliflower into the prepared baking dish.
- Pour the garlic cream sauce evenly over the cauliflower.
- Sprinkle cheddar, mozzarella, and Parmesan cheese on top.
Step 5: Bake Until Golden & Bubbly
- Bake for 20-25 minutes, or until the cheese is golden brown and bubbly.
- (Optional) Broil for the last 2 minutes for an extra crispy cheese topping!
Step 6: Garnish & Serve!
- Remove from the oven and let cool for 5 minutes.
- Sprinkle with crumbled bacon and fresh parsley for extra flavor.
- Serve warm and enjoy the cheesy, creamy deliciousness!
