9 cups Chex cereal (rice or corn variety)

4 tablespoons lemon juice (freshly squeezed preferred)

2 teaspoons lemon zest

Β½ teaspoon vanilla extract

2 cups powdered sugar

ΒΌ cup lemonade powder (optional, but recommended)

Place cereal in a large mixing bowl.

In a microwave-safe bowl, melt white chocolate chips, butter, lemon juice, zest, and vanilla in 30-second intervals, stirring between each, until smooth.

Pour the mixture over the cereal. Stir gently to coat evenly.

In a gallon zip-top bag, combine powdered sugar and lemonade powder.

Add coated cereal to the bag, seal, and shake until well coated.

Spread on parchment-lined baking sheet to cool.

Store in an airtight container.
