1. Brown the Beef
In a skillet, cook ground beef, onion, and bell pepper over medium heat until beef is browned. Drain excess fat.
2. Season and Simmer
Stir in taco seasoning, water, and diced tomatoes with green chiles. Simmer 5-7 minutes until thickened.
3. Prepare the Base
Press biscuit dough into a greased 9×13 baking dish, forming an even base.
4. Layer the Casserole
- Spoon beef mixture over the biscuit base.
- Mix sour cream and mayo; spread over beef.
- Sprinkle shredded cheddar and Monterey Jack cheese on top.
