Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 very ripe banana, mashed
- 1 (20 oz) can crushed pineapple in juice (not drained)
- 1/4 cup sweetened shredded coconut
Instructions
1. Prepare the Pan and Preheat the Oven:
- Preheat your oven to 350Β°F (175Β°C). Grease a loaf pan with non-stick spray or line it with parchment paper for easy removal.
2. Cream the Butter and Sugar:
- In a large mixing bowl, use an electric mixer on low speed to cream together the softened butter and sugar until smooth and creamy.
3. Add the Wet Ingredients:
- Beat in the eggs, one at a time, mixing gently after each addition.
- Mix in the mashed banana and the crushed pineapple (including the juice) until well blended.
4. Combine the Dry Ingredients:
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
5. Mix the Batter:
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing to keep the bread light and tender.
- Stir in the shredded coconut until evenly incorporated.
6. Bake the Bread:
- Pour the batter into the prepared loaf pan and spread it out evenly.
- Bake for about 1 hour, or until a toothpick inserted into the center of the bread comes out clean.
7. Cool and Serve:
- Allow the bread to cool completely in the pan before removing it. Once cooled, slice into thick pieces and enjoy.
