This Frito Pie is comfort food at its finest, with layers of flavors and textures that are perfect for the holiday season! Quick, hearty, and topped with crispy Fritos and melty cheese, it’s a surefire hit for gatherings or a cozy family dinner.

Ingredients

 

  • 1 lb ground beef

  • 1 medium onion, chopped

  • 1 packet taco seasoning

  • 1 Tbsp chili powder

  • 1 (10 oz) can diced tomatoes with green chilies, drained

  • 1 (15 oz) can beans (ranch-style or pinto), drained

  • 1 bag (~9-10 oz) Fritos corn chips (reserve ~1 cup for topping)

  • 2 cups shredded cheddar (or cheddar + Monterey Jack blend)

  • Optional toppings: sour cream, diced tomatoes, sliced jalapeños, chopped cilantro, green onions, avocado slices

Instructions

 

  1. Preheat oven to 350 °F (≈175 °C).

  2. In a skillet, cook beef + onion until browned and onions softened. Drain fat.

  3. Add taco seasoning + chili powder; stir.

  4. Mix in drained tomatoes with green chilies and beans; simmer briefly.

  5. In a 9×13 dish, spread ~¾ of the chips as base.

  6. Spoon beef-bean mixture on top of chips, spread evenly.

  7. Sprinkle shredded cheese over the top.

  8. Bake ~15-20 minutes until cheese is melted and bubbly.

  9. Remove from oven; sprinkle reserved chips on top.

  10. Serve hot with your favorite toppings.
