Ingredients

1 lb ground beef

1 medium onion, chopped

1 packet taco seasoning

1 Tbsp chili powder

1 (10 oz) can diced tomatoes with green chilies, drained

1 (15 oz) can beans (ranch-style or pinto), drained

1 bag (~9-10 oz) Fritos corn chips (reserve ~1 cup for topping)

2 cups shredded cheddar (or cheddar + Monterey Jack blend)

Optional toppings: sour cream, diced tomatoes, sliced jalapeños, chopped cilantro, green onions, avocado slices
Instructions

Preheat oven to 350 °F (≈175 °C).

In a skillet, cook beef + onion until browned and onions softened. Drain fat.

Add taco seasoning + chili powder; stir.

Mix in drained tomatoes with green chilies and beans; simmer briefly.

In a 9×13 dish, spread ~¾ of the chips as base.

Spoon beef-bean mixture on top of chips, spread evenly.

Sprinkle shredded cheese over the top.

Bake ~15-20 minutes until cheese is melted and bubbly.

Remove from oven; sprinkle reserved chips on top.

Serve hot with your favorite toppings.
