- 1 pound ground beef
- 1 small onion, finely chopped
- 1 packet taco seasoning
- 1 (10-ounce) can diced tomatoes with green chilies
- 1 (15-ounce) can Ranch Style beans
- 1 cup corn kernels
- 1 (10.25-ounce) bag Fritos
- 1 ½ cups shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C). Spread 3/4 of the Fritos in an even layer on the bottom of a 9×13-inch baking dish.
- In a large skillet, brown the ground beef and chopped onion over medium-high heat until the beef is cooked through and onions are softened. Drain any excess grease.
- Stir in the taco seasoning until evenly coated.
- Add diced tomatoes with green chilies, ranch-style beans, and corn, mixing until well combined.
- Pour the beef mixture over the layer of Fritos in the baking dish, spreading it out evenly.
- Sprinkle shredded cheddar cheese over the top, covering the mixture completely.
- Bake for 15-20 minutes, until the cheese is melted and bubbly.
- Before serving, sprinkle the remaining Fritos on top. Add your favorite taco toppings like sour cream, diced tomatoes, jalapeños, or avocado for a festive touch!
