Easy Pineapple Cake 🍍
This irresistibly moist cake is bursting with tropical pineapple flavor and finished with a sweet pineapple glaze. Perfect for any occasion!

Ingredients

For the Cake:

  • 1 box yellow cake mix (15.25 oz)

  • Β½ cup salted butter, melted

  • ΒΎ cup pineapple juice

  • 3 eggs

  • 1 cup crushed or chunked pineapple

For the Glaze:

  • ΒΎ cup pineapple juice

  • 1 cup powdered sugar

  • ΒΌ cup butter, room temperature

  • 1Β½ cups additional powdered sugar (for final drizzle)

Instructions

  1. Preheat oven to 350Β°F. Grease a 10–12 cup bundt pan.

  2. In a bowl, combine pineapple juice, melted butter, and cake mix. Add eggs and pineapple. Mix on high for 2 minutes.

  3. Pour into pan and bake 35–40 minutes. Cool in pan 15 minutes.

  4. In a saucepan, combine ΒΎ cup pineapple juice, 1 cup powdered sugar, and ΒΌ cup butter. Heat until melted.

  5. Poke holes in the bottom of the cake (still in pan). Pour β…“ of glaze over cake. Cool 15 minutes.

  6. Flip cake onto platter. Add 1Β½ cups powdered sugar to remaining glaze and drizzle over cake.

  7. Let set slightly or serve immediately.
