Easy Pineapple Cake 🍍
This irresistibly moist cake is bursting with tropical pineapple flavor and finished with a sweet pineapple glaze. Perfect for any occasion!

Ingredients

For the Cake:

  • 1 box yellow cake mix (15.25 oz)

  • ½ cup salted butter, melted

  • ¾ cup pineapple juice

  • 3 eggs

  • 1 cup crushed or chunked pineapple

For the Glaze:

 

  • ¾ cup pineapple juice

  • 1 cup powdered sugar

  • ¼ cup butter, room temperature

  • 1½ cups additional powdered sugar (for final drizzle)

Instructions

  1. Preheat oven to 350°F. Grease a 10–12 cup bundt pan.

  2. In a bowl, combine pineapple juice, melted butter, and cake mix. Add eggs and pineapple. Mix on high for 2 minutes.

  3. Pour into pan and bake 35–40 minutes. Cool in pan 15 minutes.

  4. In a saucepan, combine ¾ cup pineapple juice, 1 cup powdered sugar, and ¼ cup butter. Heat until melted.

  5. Poke holes in the bottom of the cake (still in pan). Pour ⅓ of glaze over cake. Cool 15 minutes.

  6. Flip cake onto platter. Add 1½ cups powdered sugar to remaining glaze and drizzle over cake.

  7. Let set slightly or serve immediately.
