Cracker Barrel Meatloaf

Ingredients

Meatloaf

  • 1 ½ lbs ground beef (80/20)

  • 3 eggs, beaten

  • 1 medium onion, finely chopped

  • 1 cup shredded sharp cheddar cheese

  • 1 sleeve Ritz crackers (about 35), crushed

  • ½ cup milk

  • 1 tsp salt

  • ½ tsp black pepper

Glaze

  • ½ cup ketchup

  • ½ cup brown sugar

  • 1 tsp yellow mustard

Instructions

  1. Preheat oven to 350°F. Grease a loaf pan or baking sheet.

  2. In a large bowl, mix ground beef, eggs, onion, cheese, crackers, milk, salt, and pepper until just combined.

  3. Form into a loaf and place in pan or on baking sheet. Bake for 30 minutes.

  4. Meanwhile, mix ketchup, brown sugar, and mustard in a small bowl.

  5. After 30 minutes, top meatloaf with glaze and return to oven for another 30–35 minutes (until internal temp is 160°F).

  6. Rest for 10 minutes, slice, and serve.
