Ingredients
Meatloaf

1 ½ lbs ground beef (80/20)

3 eggs, beaten

1 medium onion, finely chopped

1 cup shredded sharp cheddar cheese

1 sleeve Ritz crackers (about 35), crushed

½ cup milk
-
1 tsp salt
-
½ tsp black pepper
Glaze
-
½ cup ketchup
-
½ cup brown sugar
-
1 tsp yellow mustard
Instructions

Preheat oven to 350°F. Grease a loaf pan or baking sheet.

In a large bowl, mix ground beef, eggs, onion, cheese, crackers, milk, salt, and pepper until just combined.

Form into a loaf and place in pan or on baking sheet. Bake for 30 minutes.

Meanwhile, mix ketchup, brown sugar, and mustard in a small bowl.

After 30 minutes, top meatloaf with glaze and return to oven for another 30–35 minutes (until internal temp is 160°F).

Rest for 10 minutes, slice, and serve.
