Ingredients

 

🥔 5 large potatoes, peeled and diced
🧈 3 tbsp butter
🧅 1 large onion, chopped
🧄 3 cloves garlic, minced
🌾 ¼ cup all-purpose flour
🍗 4 cups chicken or vegetable broth
🥛 2 cups heavy cream
🌶️ 2 tsp Cajun seasoning
🧂 1 tsp salt
⚫ ½ tsp black pepper
🧀 1 cup shredded cheddar cheese
🍶 ½ cup sour cream
🍅 ½ cup chopped sun-dried tomatoes or roasted red peppers (bacon alternative)
🌿 Chopped green onions for garnish

Instructions

 

  1. Melt butter, sauté onion and garlic until fragrant.

  2. Stir in flour to make a roux, whisk in broth until smooth.

  3. Add potatoes; simmer 20 minutes until tender.

  4. Add cream, Cajun seasoning, salt, and pepper.

  5. Blend until smooth.

  6. Stir in cheese until melted.

  7. Add sun-dried tomatoes or roasted peppers.

  8. Serve with sour cream and green onions.
