Ingredients
For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 5 tablespoons unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 teaspoons vanilla extract
- ½ teaspoon lemon zest (optional)
- 2 large eggs
- ½ cup sour cream
For the Chocolate Topping:
- 6 oz semi-sweet or dark chocolate, melted
- 1 tablespoon coconut oil or butter (for a smoother drizzle)
For Garnish:
- 12-15 fresh strawberries
Instructions
1. Prepare the Crust
- Preheat oven to 325°F (165°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture into a springform pan (or mini cheesecake molds).
- Bake for 8-10 minutes, then let it cool.
2. Make the Cheesecake Filling
- In a large bowl, beat cream cheese and sugar until smooth.
- Add vanilla extract, lemon zest, and sour cream, mixing well.
- Beat in eggs one at a time, just until combined.
3. Bake the Cheesecake
- Pour filling over the cooled crust.
- Bake for 35-40 minutes (mini cheesecakes: 20 minutes), until the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool inside with the door slightly open.
- Chill in the fridge for at least 4 hours or overnight.
4. Melt & Drizzle the Chocolate
- Melt chocolate and coconut oil (or butter) in the microwave in 30-second intervals, stirring until smooth.
- Drizzle the chocolate over the cheesecake.
5. Add Fresh Strawberries
- Place whole or halved strawberries on top of each cheesecake.
- For extra indulgence, dip strawberries in melted chocolate before placing them on top!
