Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 5 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • ½ teaspoon lemon zest (optional)
  • 2 large eggs
  • ½ cup sour cream

For the Chocolate Topping:

  • 6 oz semi-sweet or dark chocolate, melted
  • 1 tablespoon coconut oil or butter (for a smoother drizzle)

For Garnish:

  • 12-15 fresh strawberries


Instructions

1. Prepare the Crust

  • Preheat oven to 325°F (165°C).
  • In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  • Press the mixture into a springform pan (or mini cheesecake molds).
  • Bake for 8-10 minutes, then let it cool.

2. Make the Cheesecake Filling

  • In a large bowl, beat cream cheese and sugar until smooth.
  • Add vanilla extract, lemon zest, and sour cream, mixing well.
  • Beat in eggs one at a time, just until combined.

3. Bake the Cheesecake

  • Pour filling over the cooled crust.
  • Bake for 35-40 minutes (mini cheesecakes: 20 minutes), until the center is slightly jiggly.
  • Turn off the oven and let the cheesecake cool inside with the door slightly open.
  • Chill in the fridge for at least 4 hours or overnight.

4. Melt & Drizzle the Chocolate

  • Melt chocolate and coconut oil (or butter) in the microwave in 30-second intervals, stirring until smooth.
  • Drizzle the chocolate over the cheesecake.

5. Add Fresh Strawberries

  • Place whole or halved strawberries on top of each cheesecake.
  • For extra indulgence, dip strawberries in melted chocolate before placing them on top!
