2 cups diced potatoes

1 tbsp vegetable oil or butter

1 tsp chili powder

½ tsp garlic powder

Salt & pepper, to taste

1½ cups shredded cheddar cheese

4 large flour tortillas
Optional Add-ins:

Sautéed onions or bell peppers

Green chiles or jalapeños

Cooked black beans or refried beans

Hot sauce, sour cream, or salsa

Chopped cilantro
Instructions

Heat oil in skillet and cook diced potatoes 12–15 mins until golden. Season with chili powder, garlic powder, salt, and pepper.

Warm tortillas on a pan or in microwave until soft and pliable.

Fill each tortilla with potatoes and shredded cheese. Add extras if using.

Roll into burritos, folding in the sides and rolling up tightly.

Optional: Toast burritos in a hot pan 1–2 mins per side for extra crunch.

Serve warm with salsa, sour cream, or guacamole.
