Ingredients
For the Cookies:
- 1/2 cup butter, softened ๐ง

- 1 egg ๐ฅ
- 1 tsp vanilla extract ๐ฟ
- 1 1/4 cups all-purpose flour ๐พ
- 1/2 tsp baking powder ๐ฅ

- 2 tbsp milk ๐ฅ
For the Filling:
- 1 cup milk ๐ฅ
- 2 tbsp sugar ๐ฌ
- 1 tbsp cornstarch ๐ฝ
- 1 egg yolk ๐ฅ
- 1/2 tsp vanilla extract ๐ฟ
For the Ganache:
- 1/2 cup heavy cream ๐ฅ
- 1/2 cup semisweet chocolate chips ๐ซ
Instructions
Preheat oven to 350ยฐF (175ยฐC). Cream butter and sugar. Add egg and vanilla, then mix in dry ingredients and milk. Scoop onto baking sheet, bake 8-10 minutes until edges are golden.
2. Make the Cream FillingIn a saucepan, whisk milk, sugar, cornstarch, and egg yolk. Cook over medium heat, stirring, until thickened. Remove from heat, add vanilla. Cool completely.
3. Prepare the GanacheHeat cream until steaming. Pour over chocolate chips, let sit 2 minutes, then stir until smooth.
4. Assemble CookiesSpread cream on one cookie, top with another, and spoon ganache over the top. Chill slightly to set.
