Ingredients
For the Cookies:
- 1/2 cup butter, softened π§

For the Filling:
- 1 cup milk π₯
- 2 tbsp sugar π¬
- 1 tbsp cornstarch π½
- 1 egg yolk π₯
- 1/2 tsp vanilla extract πΏ
For the Ganache:
- 1/2 cup heavy cream π₯
- 1/2 cup semisweet chocolate chips π«
Instructions
Preheat oven to 350Β°F (175Β°C). Cream butter and sugar. Add egg and vanilla, then mix in dry ingredients and milk. Scoop onto baking sheet, bake 8-10 minutes until edges are golden.
2. Make the Cream FillingIn a saucepan, whisk milk, sugar, cornstarch, and egg yolk. Cook over medium heat, stirring, until thickened. Remove from heat, add vanilla. Cool completely.
3. Prepare the GanacheHeat cream until steaming. Pour over chocolate chips, let sit 2 minutes, then stir until smooth.
4. Assemble CookiesSpread cream on one cookie, top with another, and spoon ganache over the top. Chill slightly to set.
