Ingredients
2 large scoops French vanilla ice cream
6 oz pineapple juice
16 oz frozen pineapple chunks
4 ½ oz spiced rum (Captain Morgan recommended)
Garnish: Whipped topping, pineapple wedge, maraschino cherry
Instructions
Add ice cream, pineapple juice, frozen chunks, and rum to a blender.
Blend 30–45 seconds until smooth.
Pour into 2 cocktail glasses.
Garnish with whipped topping, a pineapple wedge, and a cherry.
Serve immediately and enjoy!
