Ham and Potato Casserole Recipe Card

Ingredients

  • 2 cups diced cooked ham

  • 4 cups peeled, diced potatoes (or 1 (32 oz) bag frozen diced potatoes)

  • 1 ½ cups shredded sharp cheddar cheese

  • 1 can (10.5 oz) cream of chicken soup

  • 1 cup sour cream

  • ½ cup milk

  • ¼ cup melted butter

  • Salt & pepper to taste

  • Optional: 1 cup crushed Ritz crackers or breadcrumbs, green onions, or parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.

  2. Parboil diced potatoes in salted water for 5–7 minutes. Drain and let cool slightly.

  3. In a large bowl, mix ham, potatoes, 1 cup cheddar, sour cream, soup, milk, butter, salt, and pepper until well combined.

  4. Spread mixture into the prepared baking dish.

  5. Top with remaining cheese and optional crushed crackers or breadcrumbs.

  6. Bake uncovered for 45–50 minutes, until bubbly and golden on top.

  7. Let rest for 5 minutes, garnish with chopped parsley or green onions, and serve warm.
