20 oz shredded hashbrowns (thawed)

1 lb sausage (cooked & drained)

¼ cup onion (finely diced)

½ red bell pepper (diced)

½ green bell pepper (diced)

2 cups cheddar cheese (shredded, divided)

8 large eggs

1 can (12 oz) evaporated milk or 1â…“ cups milk

½ tsp Italian seasoning (optional)

½ tsp kosher salt

¼ tsp black pepper
Instructions

Preheat oven to 350°F. Grease a 9×13-inch baking dish.

Brown sausage in a skillet and drain fat.

In the baking dish, layer hashbrowns, sausage, peppers, onion, and 1½ cups cheese.

Whisk eggs, milk, seasoning, salt, and pepper. Pour over mixture.

Top with remaining cheese.

Bake for 55–65 minutes until set and golden. Let cool 10 minutes before slicing.
