Ingredients
For the Bread:

2 cups flour

1 teaspoon baking soda

1 teaspoon salt

3 oz. cream cheese, softened

1 cup sugar

3 teaspoons vanilla extract

1 large egg, beaten

1/2 cup sour cream

1 (20 oz) can crushed pineapple, drained (save 2โ3 Tbsp juice)
For the Glaze:

1 1/2 cups powdered sugar

2โ3 tablespoons reserved pineapple juice
Instructions

Preheat oven to 350ยฐF and grease a 9×5-inch loaf pan.

In a bowl, whisk together flour, baking soda, and salt.

In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth.

Mix in dry ingredients, then fold in sour cream.

Add the crushed pineapple and stir gently until just combined.

Pour into prepared pan and bake for 55โ60 minutes or until a toothpick comes out clean.

Let cool in the pan for 15โ20 minutes, then transfer to a wire rack to cool completely.

Mix glaze ingredients and drizzle over the cooled loaf.
