Ingredients

1½ lbs boneless, skinless chicken thighs

1 cup soy sauce

1 cup packed brown sugar

1 cup pineapple juice

4 garlic cloves, chopped

1 tbsp fresh ginger, minced
Instructions

Marinate: Combine soy sauce, brown sugar, pineapple juice, garlic, and ginger. Pour over chicken in a sealed bag or bowl. Marinate at least 4 hours or overnight.

Simmer Marinade: After removing chicken, pour leftover marinade into saucepan. Simmer 5–10 minutes.

Grill: Cook chicken on a hot grill for 6–7 minutes per side, or until internal temp hits 165°F.

Baste & Serve: Brush chicken with the hot marinade during cooking. After grilling, pour remaining hot marinade over cooked chicken.

Enjoy: Serve hot with rice, grilled pineapple, and your favorite sides.
