1 tablespoon olive oil

1 pound Italian sausage, casings removed

1 small onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

8 lasagna noodles, broken into pieces

2 cups fresh spinach

Fresh parsley, chopped (for garnish)
Instructions

In a large pot, heat olive oil over medium heat. Add sausage and cook until browned. Remove and set aside.

In the same pot, sauté onion and garlic for 3–4 minutes until soft.

Stir in broth, heavy cream, cheeses, and herbs. Mix until smooth and melted.

Add noodles and cooked sausage. Simmer 15–20 minutes until noodles are tender.

Stir in spinach. Cook 2–3 more minutes until wilted.

Garnish with parsley and serve hot.
