Instructions
Step-by-Step Instructions
1. Make the Dough
- Warm the almond milk until it’s lukewarm (not hot) and mix with the yeast and sugar in a bowl. Let it sit for 5 minutes until foamy.
- In a large bowl, mix flour, salt, melted vegan butter, vanilla extract, and the yeast mixture. Stir until a dough forms.
- Knead the dough on a lightly floured surface for 8-10 minutes, until smooth and elastic.
- Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for 1 hour, or until doubled in size.
2. Prepare the Strawberry Filling
- In a saucepan over medium heat, cook strawberries, sugar, lemon juice, and cornstarch for 5-7 minutes, stirring frequently.
- The mixture should thicken slightly. Remove from heat and let it cool.
3. Roll & Fill the Dough
- Once the dough has risen, roll it out on a floured surface into a large rectangle (about 12×16 inches).
- Spread the cooled strawberry filling evenly over the dough.
- Roll the dough tightly from the long edge to form a log.
- Cut the log into 12 equal pieces and place them in a greased baking dish.
4. Second Rise & Bake
- Cover the rolls and let them rise for another 30 minutes.
- Preheat the oven to 350°F (175°C).
- Bake for 22-25 minutes, or until golden brown and fluffy.
5. Make the Strawberry Glaze
- Whisk together powdered sugar, strawberry puree, vanilla extract, and almond milk until smooth.
- Drizzle over warm rolls and enjoy!
Notes
Tips for the Best Vegan Sweet Rolls
- Use Fresh Strawberries – They give the best flavor, but frozen can work if thawed and drained.
- Don’t Overstuff the Filling – Too much moisture can make the dough soggy.
- Let the Dough Rise Fully – Patience is key for light, fluffy rolls.
- Customize the Glaze – Add lemon zest or swap with vanilla frosting for variety.
