That’s exactly what you get with this Tex-Mex-inspired Taco Chili, a dish that blends the best of both worlds—warming chili and zesty taco spices. Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes, with juice
  • 1 can (8 oz) tomato sauce
  • 2 tablespoons taco seasoning
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 cup water
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro


Instructions

  1. Brown the Beef: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add Onion and Garlic: Add the chopped onion and minced garlic to the skillet with the beef and sauté until the onion becomes translucent.
  3. Combine Ingredients: Transfer the beef mixture to a slow cooker or a large pot (if cooking on the stovetop). Add the black beans, corn, diced tomatoes (with juice), tomato sauce, taco seasoning, cumin, chili powder, and water. Stir everything together.
  4. Cook:

  • For Slow Cooker: Cook on low for 6-8 hours or high for 3-4 hours.
  • For Stovetop: Bring the chili to a boil, then reduce the heat and let it simmer for about 30 minutes.

  1. Season and Serve: Season with salt and pepper to taste. Serve hot with any desired toppings, like shredded cheese, sour cream, green onions, or fresh cilantro.
