Oven-Baked Breakfast Tacos – Recipe Card

Ingredients

  • 8 small flour tortillas

  • 6 large eggs

  • ½ cup shredded cheddar cheese

  • ½ cup cooked bacon, crumbled

  • ¼ cup milk

  • Salt and pepper to taste

  • 1 tablespoon butter (for greasing)

  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a muffin tin with butter or spray.

  2. Warm tortillas for 15 seconds in the microwave to soften.

  3. Press each tortilla into the muffin tin to form taco cups.

  4. In a bowl, whisk together eggs, milk, salt, and pepper.

  5. Pour egg mixture evenly into tortilla cups.

  6. Top each with shredded cheese and crumbled bacon.

  7. Bake for 15–18 minutes, or until eggs are set and cheese is melted.

  8. Remove from oven, garnish with cilantro if desired, and serve hot.
