Ingredients
For the Stir Fry:

1 lb large shrimp, peeled and deveined

1 tbsp vegetable oil

1 red bell pepper, diced

1 cup pineapple chunks (fresh or canned)

2 cloves garlic, minced
-
1 tsp grated ginger
-
Salt & pepper, to taste
For the Sauce:
-
1/3 cup soy sauce (low sodium)
-
2 tbsp honey or brown sugar
-
1 tbsp rice vinegar (or apple cider vinegar)

1 tsp sesame oil
-
1 tbsp sriracha or chili garlic sauce
-
1 tsp cornstarch + 2 tbsp water (slurry)
Optional Garnishes:

Chopped cilantro or green onions

Toasted sesame seeds

Rice or noodles for serving
Instructions

In a bowl, whisk together all sauce ingredients. Set aside.

Heat oil in a large pan over medium-high heat. SautΓ© shrimp with salt and pepper until pink (2β3 mins). Remove and set aside.

In the same pan, add garlic, ginger, and bell pepper. Cook 2 mins. Add pineapple and stir-fry 3β4 mins.

Return shrimp to pan and pour in the sauce. Cook until sauce thickens (2β3 mins).

Serve hot, garnished with cilantro, green onions, or sesame seeds. Enjoy!
