Sweet and Spicy Pineapple Shrimp Stir Fry

Ingredients

For the Stir Fry:

  • 1 lb large shrimp, peeled and deveined

  • 1 tbsp vegetable oil

  • 1 red bell pepper, diced

  • 1 cup pineapple chunks (fresh or canned)

  • 2 cloves garlic, minced

  • 1 tsp grated ginger

  • Salt & pepper, to taste

For the Sauce:

  • 1/3 cup soy sauce (low sodium)

  • 2 tbsp honey or brown sugar

  • 1 tbsp rice vinegar (or apple cider vinegar)

  • 1 tsp sesame oil

  • 1 tbsp sriracha or chili garlic sauce

  • 1 tsp cornstarch + 2 tbsp water (slurry)

Optional Garnishes:

  • Chopped cilantro or green onions

  • Toasted sesame seeds

  • Rice or noodles for serving

Instructions

  1. In a bowl, whisk together all sauce ingredients. Set aside.

  2. Heat oil in a large pan over medium-high heat. SautΓ© shrimp with salt and pepper until pink (2–3 mins). Remove and set aside.

  3. In the same pan, add garlic, ginger, and bell pepper. Cook 2 mins. Add pineapple and stir-fry 3–4 mins.

  4. Return shrimp to pan and pour in the sauce. Cook until sauce thickens (2–3 mins).

  5. Serve hot, garnished with cilantro, green onions, or sesame seeds. Enjoy!
