This recipe makes perfectly soft, fruity cookies in under 20 minutes!

Ingredients

  • 1 box strawberry cake mix (15.25 oz)
  • ½ cup vegetable oil
  • 2 large eggs
  • ¾ cup fresh strawberries, diced
  • ½ cup white chocolate chips (optional, but delicious!)

For the Glaze (Optional but Recommended!):

  • ½ cup powdered sugar
  • 1 tablespoon strawberry puree (or milk)
  • ½ teaspoon vanilla extract

Instructions

1. Preheat & Prepare

  • Preheat oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.

2. Make the Dough

  • In a bowl, mix cake mix, vegetable oil, and eggs until smooth.
  • Gently fold in diced strawberries and white chocolate chips.
  • If the dough is too sticky, chill for 15 minutes in the fridge.

3. Scoop & Bake

  • Scoop 1 ½-inch balls of dough onto the baking sheet.
  • Bake for 10-12 minutes, or until edges are set but centers are soft.
  • Let cool on the pan for 5 minutes, then transfer to a wire rack.

4. Make the Strawberry Glaze (Optional but Amazing!)

  • In a small bowl, whisk powdered sugar, strawberry puree, and vanilla until smooth.
  • Drizzle over cooled cookies for extra strawberry flavor and a pretty finish!

5. Serve & Enjoy!

  • Let the glaze set for a few minutes before serving.
  • Enjoy with a cold glass of milk or a cup of tea!
