Ingredients
- 1 box strawberry cake mix (15.25 oz)
- ½ cup vegetable oil
- 2 large eggs
- ¾ cup fresh strawberries, diced
- ½ cup white chocolate chips (optional, but delicious!)
For the Glaze (Optional but Recommended!):
- ½ cup powdered sugar
- 1 tablespoon strawberry puree (or milk)
- ½ teaspoon vanilla extract
Instructions
1. Preheat & Prepare
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
2. Make the Dough
- In a bowl, mix cake mix, vegetable oil, and eggs until smooth.
- Gently fold in diced strawberries and white chocolate chips.
- If the dough is too sticky, chill for 15 minutes in the fridge.
3. Scoop & Bake
- Scoop 1 ½-inch balls of dough onto the baking sheet.
- Bake for 10-12 minutes, or until edges are set but centers are soft.
- Let cool on the pan for 5 minutes, then transfer to a wire rack.
4. Make the Strawberry Glaze (Optional but Amazing!)
- In a small bowl, whisk powdered sugar, strawberry puree, and vanilla until smooth.
- Drizzle over cooled cookies for extra strawberry flavor and a pretty finish!
5. Serve & Enjoy!
- Let the glaze set for a few minutes before serving.
- Enjoy with a cold glass of milk or a cup of tea!
