Ingredients
For the Cookies:
- 1 box strawberry cake mix
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
For the Strawberry Lemon Glaze:
- 1 cup powdered sugar
- 1 tablespoon strawberry jam
- 2 tablespoons lemon juice
- Zest of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the strawberry cake mix, vegetable oil, eggs, and vanilla extract. Stir until well mixed and a dough forms.
- Using a cookie scoop or spoon, form the dough into balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk together powdered sugar, strawberry jam, lemon juice, and lemon zest in a small bowl until smooth. If the glaze is too thick, add a little more lemon juice; if too thin, add more powdered sugar.
- Once the cookies have cooled, drizzle them with the strawberry lemon glaze. Allow the glaze to set before serving.
