Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1 cup fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1/2 cup chicken broth
Instructions
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Filling:
- In a bowl, combine ricotta cheese, chopped spinach, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well blended.
- Stuff the Chicken:
- Cut a pocket into the side of each chicken breast. Stuff each pocket with the ricotta mixture, dividing it evenly. Use toothpicks to secure the openings if necessary.
- Sear the Chicken:
- Heat olive oil in a large oven-proof skillet over medium-high heat. Add the stuffed chicken breasts and sear on both sides until golden brown, about 3-4 minutes per side.
- Bake:
- Pour chicken broth into the skillet around the chicken. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Rest and Serve:
- Allow the chicken to rest for a few minutes before serving. This helps keep the juices inside, making the chicken tender and flavorful.
