2½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 cup butter, softened

1½ cups granulated sugar

2 large eggs

2 tbsp lemon juice

2 tsp grated lemon zest

1 tsp vanilla extract

Powdered sugar, for dusting
Instructions

Preheat oven to 375°F. Line baking sheets with parchment paper.

In a bowl, whisk flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, cream butter and sugar for 3 minutes until light and fluffy.

Add eggs one at a time, then mix in lemon juice, zest, and vanilla.

Gradually beat in dry ingredients until combined.

Drop by tablespoonfuls onto prepared sheets. Bake 10–12 minutes or until edges are lightly golden.

Cool 5 minutes on sheets, then transfer to wire racks to cool completely.

Dust with powdered sugar before serving. Enjoy!
