Instructions
Step 1: Prepare the Cucumbers
- Wash cucumbers thoroughly.
- Place them on a cutting board and gently smack them with a rolling pin or the flat side of a knife until they crack open.
- Cut them into bite-sized pieces and transfer to a bowl.
- Sprinkle with ½ tsp salt, toss, and let sit for 5-10 minutes to draw out excess water.
- Drain any released liquid.
Step 2: Make the Dressing
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, garlic, red pepper flakes, and chili oil.
- Taste and adjust seasoning as needed.
Step 3: Toss & Serve
- Pour the dressing over the smashed cucumbers and toss well.
