- ⅓ cup olive oil
For the Rice Bowl:
- 2 cups cooked white or brown rice (jasmine or basmati works best!)
- 1 tbsp butter or olive oil (to mix into the rice for flavor)
- Extra chopped fresh parsley or cilantro for garnish (optional)
Instructions
Step 1: Marinate the Skirt Steak
- In a small bowl, mix olive oil, lime juice, minced garlic, salt, pepper, and smoked paprika.
- Rub the mixture evenly over the skirt steak and let it marinate for at least 10-15 minutes (or up to 2 hours for deeper flavor).
Step 2: Make the Chimichurri Sauce
- In a bowl, combine parsley, cilantro, garlic, red wine vinegar, red pepper flakes, salt, and black pepper.
- Slowly drizzle in the olive oil, stirring to combine.
- Let the chimichurri sit for at least 10 minutes to develop its bold flavors.
Step 3: Cook the Skirt Steak
- Heat a cast iron skillet or grill pan over high heat.
- Sear the steak for 3-4 minutes per side for medium-rare (or adjust to your preferred doneness).
- Transfer to a cutting board and let it rest for 5 minutes before slicing against the grain.
Step 4: Prepare the Rice
- Cook white or brown rice according to package instructions.
- Stir in butter or olive oil for extra flavor.
Step 5: Assemble the Rice Bowls
- Divide the cooked rice into bowls.
- Top with sliced steak.
- Drizzle generously with chimichurri sauce.
- Garnish with extra chopped parsley or cilantro.
