Ingredients
For the Noodles & Shrimp:
- 8 oz lo mein noodles (or spaghetti as a substitute)
- 12-16 large shrimp, peeled & deveined
- 1 tbsp vegetable oil
- 2 cloves garlic, minced
- ½ tsp ginger, minced
- ½ tsp salt & black pepper
For the Lo Mein Sauce:
- ¼ cup soy sauce (low sodium preferred)
- 1 tbsp oyster sauce (for umami depth)
- 1 tbsp hoisin sauce (adds a touch of sweetness)
- 1 tbsp dark soy sauce (for color & bold flavor)
- ½ tsp sesame oil (for nuttiness)
- 1 tsp brown sugar (balances the flavors)
- ¼ cup chicken broth or water
Vegetables (Customizable!):
- 1 cup bok choy or baby spinach
- ½ cup shredded carrots
- ½ cup sliced bell peppers
- ½ cup onions, thinly sliced
- ¼ cup green onions, chopped (for garnish)
Instructions
Step 1: Prepare the Noodles
- Cook lo mein noodles according to package instructions. Drain and rinse under cold water to stop cooking.
- Toss with a little sesame oil to prevent sticking.
Step 2: Make the Lo Mein Sauce
- In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, dark soy sauce, sesame oil, brown sugar, and chicken broth.
- Set aside for later.
Step 3: Cook the Shrimp
- Heat 1 tbsp vegetable oil in a large wok or pan over medium-high heat.
- Add shrimp, season with salt & pepper, and stir-fry for 1-2 minutes per side until pink and opaque.
- Remove from pan and set aside.
Step 4: Stir-Fry the Vegetables
- In the same pan, add a little more oil if needed.
- Stir-fry garlic, ginger, onions, carrots, and bell peppers for 2-3 minutes until slightly softened.
- Add bok choy (or spinach) and cook for 1 minute until just wilted.
Step 5: Toss Everything Together
- Return shrimp and cooked noodles to the pan.
- Pour in the prepared lo mein sauce and toss everything together.
- Stir-fry for 2-3 minutes, allowing the noodles to absorb the flavors.
Step 6: Garnish & Serve
- Sprinkle with green onions & sesame seeds.
- Serve hot with extra soy sauce or chili oil on the side.
