This dish uses simple ingredients that come together for big takeout-style flavors!

Ingredients

For the Noodles & Shrimp:

  • 8 oz lo mein noodles (or spaghetti as a substitute)
  • 12-16 large shrimp, peeled & deveined
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • ½ tsp ginger, minced
  • ½ tsp salt & black pepper

For the Lo Mein Sauce:

  • ¼ cup soy sauce (low sodium preferred)
  • 1 tbsp oyster sauce (for umami depth)
  • 1 tbsp hoisin sauce (adds a touch of sweetness)
  • 1 tbsp dark soy sauce (for color & bold flavor)
  • ½ tsp sesame oil (for nuttiness)
  • 1 tsp brown sugar (balances the flavors)
  • ¼ cup chicken broth or water

Vegetables (Customizable!):

  • 1 cup bok choy or baby spinach
  • ½ cup shredded carrots
  • ½ cup sliced bell peppers
  • ½ cup onions, thinly sliced
  • ¼ cup green onions, chopped (for garnish)

Instructions

Step 1: Prepare the Noodles

  1. Cook lo mein noodles according to package instructions. Drain and rinse under cold water to stop cooking.
  2. Toss with a little sesame oil to prevent sticking.

Step 2: Make the Lo Mein Sauce

  1. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, dark soy sauce, sesame oil, brown sugar, and chicken broth.
  2. Set aside for later.

Step 3: Cook the Shrimp

  1. Heat 1 tbsp vegetable oil in a large wok or pan over medium-high heat.
  2. Add shrimp, season with salt & pepper, and stir-fry for 1-2 minutes per side until pink and opaque.
  3. Remove from pan and set aside.

Step 4: Stir-Fry the Vegetables

  1. In the same pan, add a little more oil if needed.
  2. Stir-fry garlic, ginger, onions, carrots, and bell peppers for 2-3 minutes until slightly softened.
  3. Add bok choy (or spinach) and cook for 1 minute until just wilted.

Step 5: Toss Everything Together

  1. Return shrimp and cooked noodles to the pan.
  2. Pour in the prepared lo mein sauce and toss everything together.
  3. Stir-fry for 2-3 minutes, allowing the noodles to absorb the flavors.

Step 6: Garnish & Serve

  • Sprinkle with green onions & sesame seeds.
  • Serve hot with extra soy sauce or chili oil on the side.
