Ingredients
For the Shrimp Marinade:
- 14 oz (400 grams) shrimp
- 1/4 tsp salt
- 1 tsp paprika
- 1/3 tsp black pepper
- 2 tsp vegetable oil
For the Sauce:
- 1/2 cup water
- 1/2 tsp sugar
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- 1/2 tbsp hoisin sauce
- 2 tsp cornstarch
- 1 tsp dark soy sauce
For the Stir Fry:
- 2-3 tbsp vegetable oil for stir-frying
- 12 oz (340 grams) broccoli
- 8 cloves garlic, diced
- 1/2 tbsp minced ginger
- A few dried red chilies (optional)
- 2 tbsp water

Directions
- Marinate the Shrimp: Use paper towels to dry the shrimp, then season with salt, paprika, black pepper, and a drizzle of vegetable oil. Mix well and set aside.
- Prepare the Sauce: In a bowl, combine the water, sugar, oyster sauce, soy sauce, hoisin sauce, cornstarch, and dark soy sauce. Set the sauce aside.
- Prepare the Broccoli: Cut the broccoli into florets. Optionally, peel and cut the stems into quarters, and pickle them for extra flavor.
- Prep the Garlic and Ginger: Dice the garlic and mince the ginger. Optionally, cut open a few dried red chilies for added spice.
- Heat the Wok: Turn the heat to high and heat your carbon steel wok until smoking hot. Drizzle in vegetable oil and swirl to coat the bottom.
- Stir Fry the Shrimp: Add the marinated shrimp to the hot wok. Stir-fry for a couple of minutes until they turn pink but are still slightly translucent. Remove the shrimp from the wok.
- Stir Fry the Vegetables: Tilt the wok to leave the oil behind. Reduce the heat to medium and add the garlic, ginger, optional chilies, and broccoli florets. Stir-fry for 1-2 minutes.
- Steam the Broccoli: Add 2 tablespoons of water to the side of the wok and quickly cover with a lid to trap the steam, cooking the broccoli through.
- Add the Sauce and Shrimp: Pour the prepared sauce into the wok and return the cooked shrimp. Toss everything together for a couple of minutes or until the sauce thickens.
