Ingredients
For the Filling:
- 1 pound ground beef, sausage, or turkey
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 6 large eggs, scrambled
- ½ cup milk
- 1 cup shredded cheddar cheese
- ½ cup diced tomatoes
- ¼ cup chopped onions
- ½ cup bell peppers, diced
For the Burrito Layers:
- 6 large flour tortillas
- 2 tablespoons melted butter or olive oil
Instructions
1. Preheat & Prepare
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9×13-inch sheet pan.
2. Cook the Meat
- In a skillet, cook ground beef or sausage over medium heat until browned.
- Drain excess grease and season with chili powder, cumin, garlic powder, salt, and pepper.
3. Scramble the Eggs
- In a bowl, whisk together eggs and milk.
- Pour into a greased skillet and softly scramble until just set.
4. Assemble the Burritos
- Lay flour tortillas across the sheet pan, slightly overlapping.
- Sprinkle half of the cheese evenly over the tortillas.
- Spread the scrambled eggs, cooked meat, tomatoes, onions, and peppers evenly.
- Top with the remaining cheese.
5. Fold & Bake
- Fold the tortillas over the filling to create a sealed burrito-style layer.
- Brush with melted butter or olive oil for a crispy, golden finish.
- Bake for 20-25 minutes, or until golden brown.
6. Slice & Serve!
- Let cool slightly, then slice into squares and serve warm.
